EASY FOOD HOME COOK HERO AWARDS 2011

In November readers of Easyfood Magazine were asked to enter their tried and tested chicken based recipes into a Home-Cook Hero Cookery Competition to get the chance to win recognition for all their efforts in the kitchen! Moy Park sponsored the 'Fabulous Fowl - Best Chicken Dish' category and received some amazing entries. Three shortlisted entrants were invited to cook for a panel of judges at the 'Cooks Academy' in Dublin and then went on to a gala banquet and awards ceremony at Dublin's Shelbourne Hotel that evening.

We would like to congratulate the Moy Park 'Fabulous Fowl' category winner, Mr Shani Alam for his delectable Chicken Curry with Mint Yoghurt and Homemade Roti which won first prize. Congratulations also goes to the two finalists, Mary O'Farrell with her Chicken Parmigiano with Basil Mash recipe and Fiona Sherlock with her Sexy Chicken Noodle Soup recipe.

Winner's Recipe
Name: Shani Alam

Recipe: Chicken Curry with Mint Yogurt and Homemade Roti

  • 1 Moypark fresh chicken - skinned
  • 1 onion - chopped
  • 1 tin chopped tomatoes
  • 2tsp ginger & garlic paste
  • 2 tsp turmeric
  • 2 tsp chilli powder
  • Salt and Pepper'1
  • 2 tsp cumin
  • 2 tsp garam masala
  • 2 tsp coriander
  • 2 tbsp sunflower oil
  • 4 fresh green Chillies
  • 1 tbsp chopped fresh coriander
  • 2 fresh tomatoes
  • 1 tbsp natural yogurt
  • Basmati Rice

Mint Yogurt:
  • Natural yogurt
  • Cucumber
  • Mint sauce
  • Garam masala
  • Salt

Homemade Roti:
  • 500g Wholemeal Chapatti Atta Flour
  • Water
  • Pinch of salt

Method: Curry
  • Chop chicken into 10 pieces on the bone
  • Put oil in saucepan and add onion to hot oil
  • When onion is nicely brown add garlic and ginger paste.
  • Add tin of chopped tomatoes, turmeric, chilli powder, cumin, garam masala, coriander, salt and black pepper.
  • Mix well and allow to cook on a slow heat for 5/10 minutes until the oil has separated from the sauce.
  • Add chicken pieces and stir.
  • Cover saucepan and cook on slow heat for 20/30 minutes or until the chicken is cooked.
  • When chicken is cooked add fresh coriander, chopped fresh tomatoes and green chillies.
  • Allow to cook for a further 5 minutes.

Basmati Rice:
Cook rice according to instructions on pack

Homemade Roti:
  • Put flour in large bowl.
  • Add pinch of salt and mix well.
  • Slowly add enough water to make a sticky dough consistency while mixing with your hand.
  • Leave dough sit for 10 minutes.
  • Lightly flour your hands and take a handful of dough from the bowl. Roll the dough into a ball in your hands.
  • On a floured surface flatten the ball down to make a circle. Roll out the dough until it is very thin.
  • Heat a heavy bottomed frying pan until very hot.
  • Place dough on pan and cook on each side until brown

Mint Yogurt:
  • Put natural yogurt into small bowl
  • Add finely chopped and skinned cucumber
  • Add ½tsp mint sauce, ½tsp garam masala and a pinch of salt.

"This recipe was the only thing that I could cook when I came to Ireland from Pakistan 20 years ago and it has been a favourite with everyone I cook it for since then. It reminds me of family in Pakistan and Ireland and it works everytime."
